It is the oil with the most organoleptic properties and a lower concentration of oleic acid, resulting in an acidity level close to 1% . This low acidity of extra virgin olive oil gives it an intense fruity flavor, with a slight acidic touch and its characteristic greenish color.
One of the beneficial properties of Extra Virgin Olive Oil is its low content of polyunsaturated fatty acids, giving it excellent resistance to oxidation and making it the least likely to produce substances that are dangerous to health.
