Once at the olive mill, the olives begin their transformation. They are cleaned, crushed, and subjected to a cold mechanical extraction process, which preserves their most valuable compounds.

During the malaxation and centrifugation, temperature, time, and oxygenation are meticulously controlled to prevent defects and keep the aromas and antioxidants intact.

Afterward, the oil is stored in stainless steel tanks, protected from light, air, and heat, to guarantee its stability. Each batch is analyzed, labeled, and traceable, ensuring that the end consumer receives a product of maximum purity and freshness.
